Barbecued Irish Ham with Three Fruit Marmalade Glaze

Ingredients

1. 1 SuperValu Signature Tastes Irish Hampshire Ham, 2.7kg

2. 2 onions, studded with 3 cloves

3. 2 carrots ​

4. 8 tbsp SuperValu Signature Tastes Three Fruit Orange Marmalade ​

5. 6 tbsp brown sugar

6. 10g cloves

7. 1 bay leaf

Directions

1. Place the ham in a large heavy-based saucepan, and add the studded onions, carrots, and bay leaf. Add enough water to cover the ham completely, then bring to a boil and reduce the heat to simmer for about 130 minutes (20-25 minutes per 500g). Remove from the heat and allow the ham to cool in the cooking liquor. Optional: This step could be complete a day in advance and refrigerated overnight.

2. Preheat a charcoal barbecue to between 150 ̊C - 170 ̊C, using a temperature gauge to get an accurate reading.

3. Place the cooled boiled ham on a roasting tray. Using a sharp knife, carefully remove the skin from the ham, then gently score the fat. Stud the ham with cloves.

4. Spread the marmalade glaze over the ham with a spoon and sprinkle with brown sugar.

5. Barbecue over indirect heat for 20-25 minutes until golden brown, then remove from the barbecue and let it rest for 10 minutes covered with a tent of foil.

6.Carve the ham and serve immediately or allow to cool and serve at room temperature.
