Quick & Easy Veggie Spring Rolls

Ingredients
4 leaves of York cabbage, thinly sliced
½ each red, yellow, and green pepper, thinly sliced
1 spring onion, thinly sliced
2 carrots, finely sliced
2 garlic cloves, thinly sliced
80g bean sprouts
2 tbsp sunflower oil (plus extra for brushing or spraying)
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp sesame oil
Filo pastry sheets, cut into 6-inch squares
1 tbsp flour mixed with 1 tsp water (for sealing)
Sweet chilli sauce, for dipping
Salt, to taste
Pepper, to taste

- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- Filo pastry sheets, cut into 6-inch squares
- 1 tbsp flour mixed with 1 tsp water (for sealing)
- Sweet chilli sauce, for dipping
Method
- Preheat the air fryer to 200°C.
- Heat sunflower oil in a pan and stir-fry all vegetables for 2–3 minutes.
- Add oyster sauce, soy sauce, and sesame oil. Cook for 1 more minute.
- Season with salt and pepper, then set aside to cool completely (use the fridge to speed up the process).
- Place 1 tbsp of filling in the top centre of each filo square. Roll over twice, fold in the sides, and roll up fully.
- Seal the edge with flour paste.
- Brush or spray rolls with sunflower oil.
- Air fry for 12 minutes, turning halfway and brushing with oil again.
- Serve hot with sweet chilli sauce.
Top Tip
To keep the pastry crisp and flaky, don’t overfill and make sure the filling is completely cool before rolling.
