Black Tiger Prawn Tacos

Ingredients
1 tsp olive oil
1 pack SuperValu Signature Tastes Black Tiger Prawns
150g red cabbage, shredded
1 carrot, grated
1 onion, sliced
1 lemon
2 tbsp mayonnaise
8 soft tortillas
100ml sour cream
2 tbsp coriander, chopped
¼ iceberg lettuce, shredded
40g rocket leaves
4 tbsp SuperValu Signature Tastes Fire Roasted Pepper Relish
100g grated cheese
Salt
Pepper
2 garlic cloves, chopped
1 red chilli, chopped
Directions

1. In a bowl, combine the red cabbage, grated carrots, chopped onions, half lemon juice,

and mayonnaise and stir. Keep covered.

2. Pre-heat a non-stick frying pan over high heat. Sprinkle some salt over the hot dry pan. Add the prawns and sear for a minute or so.

3. Season and add the slices of garlic and chilli to the pan. Fry for a further minute or so and add a squeeze of lemon juice over the prawns. Remove from the heat and set aside.

4. Warm the tortillas in a pan and place them on a serving board with the salad leaves, red cabbage slaw, sour cream, roasted red pepper relish and cheese.

5. Let the family build their tacos using the tortillas, sour cream, coleslaw, prawns, lettuce, grated cheese and relish. Serve and enjoy immediately.
