Zesty Yoghurt & Pistachio Pesto

3 cups fresh basil leaves
Shelled roasted green pistachios
45g parmesan cheese
3 cloves garlic
1 lemon
100 ml extra virgin olive oil
Red pepper flakes
250g Greek yoghurt
1 tbsp Dijon or wholegrain mustard
2 tbsp cold-pressed olive oil
1 tbsp lemon juice
1 tsp lemon zest
1 tsp raw honey
Small handful of finely chopped mint or parsley
1 clove garlic, minced (optional)
Directions
Zesty Yoghurt Dressing:
- Prepare Ingredients: Gather all the ingredients for the yoghurt dressing - Greek yoghurt, Dijon or wholegrain mustard, cold-pressed olive oil, lemon juice, lemon zest, raw honey, finely chopped mint or parsley, and minced garlic if using.
- Assemble the Food Processor: Set up your food processor, ensuring it's clean and ready for use.
- Combine Ingredients: Add the Greek yoghurt, mustard, olive oil, lemon juice, lemon zest, raw honey, chopped mint or parsley, and minced garlic (if using) into the food processor.
- Blend Until Smooth: Turn on the food processor and blend the ingredients until they form a smooth and creamy consistency. This should take a few minutes to ensure all the flavors are well combined.
- Taste and Adjust: Taste the dressing and adjust the seasoning if necessary. You can add more lemon juice, honey, or herbs based on your preference.
- Transfer to a Container: Once satisfied with the taste and texture, transfer the zesty yoghurt dressing into a container. This can be refrigerated until you're ready to use it.
Pistachio Pesto:
- Prepare Ingredients: Collect the ingredients for the pesto - fresh basil leaves, shelled roasted green pistachios, parmesan cheese, garlic cloves, lemon, extra virgin olive oil, red pepper flakes, salt, and pepper.
- Assemble the Food Processor: Ensure your food processor is clean and ready for use.
- Combine Dry Ingredients: In the food processor, add the fresh basil leaves, roasted pistachios, grated parmesan cheese, garlic cloves, and a pinch of red pepper flakes.
- Pulse to Coarse Texture: Pulse the dry ingredients until they form a coarse texture. This should create a chunky base for your pesto.
- Drizzle in Olive Oil: With the food processor running, slowly drizzle in the extra virgin olive oil. Continue blending until the pesto reaches your desired consistency - whether you prefer it smooth or with a bit of texture.
