Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction - the Giant's Causeway. Bushmills is more than just a whiskey. It's a village, where family, friends and neighbours work side by side at the distillery. As we often say, "without the village, there would be no whiskey and without the whiskey, there would be no village".

A unique whiskey with a perfect balance of spicy, nutty and vanilla notes with hints of sweet sherry. Serving suggestion: Jameson, Ginger & Lime - A simple whiskey drink, it's a thirst quencher that couldn't be easier to make: 50ml of Jameson Irish Whiskey, ginger ale to taste and a wedge of lime. West Cork Dha Chasca (Two Casks) is a limited release of single malt Irish whiskey matured in Bodega Sherry casks & finished in double charred first fill Bourbon casks West Cork Dhá Chasca (Two Casks) is a unique and challenging single malt Irish whiskey, Pot distilled single malt new make whiskey is placed in Bodega Sherry casks and allowed to patiently mature for the requisite period of time. The single malt whiskey is then cut to 40% abv with naturally soft water and placed in double charred first fill Bourbon casks. The double charring process allows West Cork Distillers to produce a unique whiskey with accentuated vanilla, sweet caramel and honey attributes. These unique attributes from resting in double charred casks delicately complement the initial maturation in Bodega Sherry casks such as dried berries, green fruit and rich tannins.

So, when a local craft brewer borrowed our casks to age their fine Irish stout, it gave us an idea; why not finish our own Jameson in the stout-seasoned oak barrels? Teeling Whiskey Single Pot Still (70 cl), €55.00
During the 19th century, in the last golden era for Irish Whiskey, Dublin distillers were made famous by perfecting the use of Unmalted Barley and triple distillation. The first new release from our Dublin distillery pays homage to this traditional Dublin style. Our Single Pot Still Whiskey was crafted using a recipe of 50% unmalted spring barley and 50% malted barley which was Triple Distilled and matured in hand selected casks until we say it's ready. This is not how everyone makes Irish whiskey. It's our way. That's The Spirit of Dublin. Tasting Notes Nose: Rich notes of grapefruit, mango, white grapes, luscious peach and citrus. Taste: White pepper tickles the tongue while sumptuous notes of American oak, vanilla pods, baked biscuits and warm peaches intermingle. Finish: A dry finish with cooked barley, hints of spice and lingering maple sugar.

Triple distilled, matured and bottled by West Cork Distillers, this is 5-year-old Single Pot Still Irish Whiskey, aged in 1st fill Bourbon Casks with no colour added and is non chill filtered. On the nose there are notes of hay and fresh cut grass with a caramel and pear sweetness with undertones of prune dried fruits, while on the palate there are layers of barley and malt, vanilla and black pepper with a candy floss finish.

West Cork Black Cask Irish Whiskey is a fine blend of grain (66%) and malt (34%) whiskey aged in first fill bourbon casks for a period of three years, and then polish matured for a further year in heavily charred bourbon casks.
