Il Capolavoro is created with Italian love, carefully selected to be enjoyed with food and friends. Appassimento wines are created by doing a natural partial dehydration of the grapes, in order to produce a greater concentration of colours, aromas and flavours. This wine has an intense, deep ruby red color with a very fruity, rich, spicy and black pepper nose. The taste is also full of body, very intense and spicy, yet smooth and full of flavours.

The name Trivento comes from three winds; Polar, Zonda and Sudestada. It is these winds that make Mendoza such a distinctive and successful wine growing region. A bright crimson red whose plum and raspberry aromas mingle elegantly with vanilla notes from the 6 months spent in French and American Oak. Well balanced, with sweet tannins and a velvety finish, Trivento reserve malbec is ideal with meats and tomato dishes.

From the warmest and oldest hills of our vineyards we have selected the best estates to harvest Tinta del País (Tempranillo) grapes at their optimal point of ripeness, which will provide this wine with complexity and balance. We have recovered our estate's historical 12th century caves, as a witness of vineyard and wine art for generations. An ageing process of 24 months in American and French oak barrels and 12 months in bottle help this wine blossom and conquer the most demanding palates. Natural sediments may appear over time because of its natural elaboration process and ageing in barrel and bottle.

Lucky Rooster Red (75 cl), €8.00

The wine is produced in Portugal's Peninsula de Setúbal, a warm maritime coastal region south of Lisbon, where the grapes are harvested during the least hot periods of the day, arriving to the winery fresh and intact. 60% Merlot - 40% Cabernet Sauvignon This exceptional ''terroir cuvée'' is produced from a selection of the oldest vineyards. All the grapes are hand picked and sorted. After a total de-stemming, the long maceration during the vinification is performed under careful temperature control to bring out the best parts of the tannins potential. The wine has been aged in new French casks for 12 months long in the underground cellars of the Château. Winemakers comments: Deep colour, aromas of blackberries and hints of spice. The ageing has given elegance to its rich and tannic structure. Fine and soft with smooth, well integrated tannins on the palate, this full bodied wine deserves its place alongside any Bordeaux Grand Cru.

Original blend sourced from dark skinned grapes give an intense red colour to the wine. Ageing in medium toast French oak, together with the natural essence of dark cocoa, delivers exquisite notes of caramel and nuts. Soft tannins on the palate and a lingering finish.

Nugan Estate Scruffy's Shiraz (75 cl), €9.00

Scruffy works hard to keep our Shiraz bunches tight and our berries small and yields very low at around 4 tons per acre, which annoys our accountant. Daren Owers, our winemaker, insists on bunch sorting at harvest to make sure we only use the very best clusters. Most of the fruit is destemmed and pressed while a small portion is whole berry fermented. All parcels are kept separate during the winemaking process in our state of the art winery. We use a lot of smaller tanks as a result which is difficult, but necessary for the production of a quality wine. Pump overs and extended maceration times give us color and richness. We work with the best coopers and use a combination of French and American oak to mature this wine - 25% of which is new. Bench blending takes forever - there are so many variables and we return the final cuvee to tank for several months to come together before bottling. It's a lot of work and we really hope you enjoy the result. PS - This wine was sustainably farmed and produced in an effort to reduce our carbon footprint.
