Ingredients
2 SuperValu Signature Tastes Denver Steak
Neutral oil
3 garlic cloves, lightly bashed
2 sprigs rosemary
50g butter
160 SuperValu signature Tastes Irish Mushroom Medley, roughly chopped
50ml Irish whiskey
200ml double cream
Sea salt & ground black pepper
1 x 400g pack SuperValu Signature Tastes Smooth & Creamy Potato Mash
100g SuperValu Signature Tastes Irish White Cheddar
2 spring onions, finely sliced
1 pack Signature Tastes Extra Fine Beans, steamed
Directions
- Preheat the oven to 200°C / 180°C fan.
- Place the mashed potatoes in a large bowl and stir through half of the cheddar and all of the spring onions. Transfer to an ovenproof dish and flatten the top with the back of a spoon or spatula.
- Sprinkle the remaining cheddar cheese over the top and place in the oven for 20 minutes, until the cheese is melted and golden, and the mash is piping hot.
- For the steak, lightly oil it and season well with salt and pepper.
- Place a pan over medium-high heat, then add the steak and cook for 3–4 minutes on each side, until cooked to your liking. For the best flavour, we recommend cooking the Denver steak to medium-rare.
- A few minutes before the end of the cooking time, add the butter, garlic, and rosemary to the pan, and baste the steak with the aromatics.
- Remove the steak from the pan and cover lightly with foil. Immediately add the mushrooms to the same pan and cook until golden brown and tender – about 3–4 minutes.
- Add the whiskey, black peppercorns, and cream to the mushrooms, and allow to simmer for a few minutes until thickened. Then, remove from the heat.
- While the steak rests for 10 minutes, steam the green beans until tender-crisp, about 5 minutes.
- After the steak has rested, slice it thinly and serve with the sautéed mushrooms, cheesy mash, and steamed green beans.
