West Cork 5 Year Old Single Pot Still Irish Whiskey (70 cl), €40.00

Triple distilled, matured and bottled by West Cork Distillers, this is 5-year-old Single Pot Still Irish Whiskey, aged in 1st fill Bourbon Casks with no colour added and is non chill filtered. On the nose there are notes of hay and fresh cut grass with a caramel and pear sweetness with undertones of prune dried fruits, while on the palate there are layers of barley and malt, vanilla and black pepper with a candy floss finish.

West Cork Black Cask Irish Whiskey (70 cl), €35.00

West Cork Black Cask Irish Whiskey is a fine blend of grain (66%) and malt (34%) whiskey aged in first fill bourbon casks for a period of three years, and then polish matured for a further year in heavily charred bourbon casks. The end result is a beautifully balanced whiskey with a taste of vanilla and lingering sweetness.

West Cork Dha Chasca (Two Casks) is a limited release of single malt Irish whiskey matured in Bodega Sherry casks & finished in double charred first fill Bourbon casks West Cork Dhá Chasca (Two Casks) is a unique and challenging single malt Irish whiskey, Pot distilled single malt new make whiskey is placed in Bodega Sherry casks and allowed to patiently mature for the requisite period of time. The single malt whiskey is then cut to 40% abv with naturally soft water and placed in double charred first fill Bourbon casks. The double charring process allows West Cork Distillers to produce a unique whiskey with accentuated vanilla, sweet caramel and honey attributes. These unique attributes from resting in double charred casks delicately complement the initial maturation in Bodega Sherry casks such as dried berries, green fruit and rich tannins.

An Exceptional Expression Created Using Two Oaks and Two Styles of Premium Irish Whiskey. Aged in American Oak Bourbon Barrels from Kentucky and French Oak Cognac Casks from The Cognac Region in France, This Is a Unique Marriage of Single Pot Still and Single Malt Irish Whiskey. Dashes of sweet vanilla marry with notes of cinnamon, before opening up to depths of plum and poached pear. Pressed grapes and citrus zest make way for chocolate undertones and lingering spice.

Yellow Spot 12 Year Old Single Pot Still Whiskey (70 cl), €85.00

Whilst Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character. Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types : American bourbon barrels, Spanish sherry butts, and Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Limited quantities of Yellow Spot have been bottled making it a whiskey to savour. Nose: Mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. Taste: Honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. Finish: Sophisticated & complex with a sweetness throughout, followed by a mix of red grape & dry barley upon exit.
