2 red onion and cheddar flat breads
1 Cooleeney Brie, sliced
1 jar Signature Tastes apple and fig chutney
1 packet SuperValu rocket
3 plum tomato slices
Extra virgin olive oil to dress salad
Salt
Pepper

  • 2 red onion and cheddar flatbreads
  • 1 Cooleeney Brie, sliced
  • 1 jar Signature Tastes apple and fig chutney
  • 1 packet SuperValu rocket
  • 3 plum tomato slices
  • Extra virgin olive oil, to dress salad
  • Salt and pepper

Method

  1. Preheat the oven to 160°C and lay the flatbreads on a tray.
  2. Smear both flatbreads with a heaped tablespoon of chutney.
  3. Lay on the sliced tomatoes and add the sliced Brie, then bake in the oven for 10 minutes at 160°C.
  4. To serve, dress the rocket with 1 tablespoon of extra virgin olive oil, salt, and pepper, then place on top of the warmed flatbreads.
