Cheesy turkey and ham quesadillas with cranberry sauce

Cheesy turkey and ham quesadillas with cranberry sauce

Ingredients
100g Cheddar cheese
150g Leftover ham finely chopped
150g Leftover turkey finely chopped
1 Red onion thinly sliced
100g SuperValu mozzarella
100g SuperValu Signature Tastes cranberry sauce
4 Large SuperValu tortilla wraps
Directions
- Lay two of the wraps on a large board. Spread the cranberry sauce on the wraps, then scatter over the turkey, ham and red onion. Sprinkle over the cheese, then top with the remaining two wraps.
- Place a large frying pan over a medium high heat, then carefully lift in one of the filled quesadillas. Cook for 3 to 4 minutes, until nicely toasted underneath.
- Place a large plate on top of the frying pan. Making sure your hands are protected with a tea towel or oven gloves, quickly turn the pan over so that the quesadilla is on the plate. Put the pan back on the heat and slide the quesadilla back into the pan and cook for another 3 to 4 minutes, until heated through and the cheese has melted. Slide out of the pan onto the board and cook the second quesadilla the same way.
- Cut into slices and serve immediately.
