A fizz is a classic cocktail inspired by it's Stateside popularity in the early 20th century. This clever cocktail works well using either gin or whiskey.

60ml Kinsale Gin or Red Earl Irish Whiskey
30ml Lemon or lime juice
15ml Rich sugar syrup (2 parts sugar to 1 part water)
One egg white or 15ml of aquafaba (chickpea brine)
Soda water or sparkling water
To add a bit of colour add 4 raspberries or 4 blueberries before the second shake

Method
- Add all ingredients to your cocktail shaker.
- Do not add ice yet. Shake for 20 seconds. Add ice and shake for a further 20 seconds.
- Chill your glass by adding ice for a few seconds and remove again.
- Strain the cocktail into your chilled glass (do not add ice).
- Top with soda or sparkling water.
- Garnish with lemon and/or dried flowers.
