200g Stale ciabatta
600g Cherry Vine Tomatoes
2 tbsp Capers
1 Red onion, chopped
200g Jarred roasted red peppers
2 tbsp Red wine vinegar
8 tbsp Extra virgin olive oil
3 Sprigs fresh SuperValu basil
2 SuperValu buffalo mozzarella balls
Directions

Ingredients

  • 200g Stale ciabatta, cubed
  • 600g Cherry vine tomatoes, chopped
  • 2 tbsp Capers
  • 1 Red onion, chopped
  • 200g Jarred roasted red peppers
  • 2 tbsp Red wine vinegar
  • 8 tbsp Extra virgin olive oil
  • 3 Sprigs fresh SuperValu basil
  • 2 SuperValu buffalo mozzarella balls
  • Sea salt and black pepper, to taste

Method

  1. Bake ciabatta cubes at 120°C for 15 minutes, until dried.
  2. Combine tomatoes, capers, peppers, red onion, and ciabatta croutons in a bowl. Season with salt and pepper.
  3. Dressing: Add red wine vinegar and olive oil. Toss well.
  4. Tear mozzarella, add basil, and toss. Season to taste.
