Summer Panzanella Salad with Buffalo Mozzarella

200g Stale ciabatta
600g Cherry Vine Tomatoes
2 tbsp Capers
1 Red onion, chopped
200g Jarred roasted red peppers
2 tbsp Red wine vinegar
8 tbsp Extra virgin olive oil
3 Sprigs fresh SuperValu basil
2 SuperValu buffalo mozzarella balls

- 200g Stale ciabatta, cubed
- 600g Cherry vine tomatoes, chopped
- 2 tbsp Capers
- 1 Red onion, chopped
- 200g Jarred roasted red peppers
- 2 tbsp Red wine vinegar
- 8 tbsp Extra virgin olive oil
- 3 Sprigs fresh SuperValu basil
- 2 SuperValu buffalo mozzarella balls
- Sea salt and black pepper, to taste
Method
- Bake ciabatta cubes at 120°C for 15 minutes, until dried.
- Combine tomatoes, capers, peppers, red onion, and ciabatta croutons in a bowl. Season with salt and pepper.
- Dressing: Add red wine vinegar and olive oil. Toss well.
- Tear mozzarella, add basil, and toss. Season to taste.
