Gem Sultana Apple Cake

115g Gem Caster Sugar
2 Large Eggs
½ tsp Vanilla Extract
230g Gem Self-Raising Flour
180g Gem Gourmet Sultanas
1 Apple (100g), Grated
20ml Milk

- 20ml Milk
Method
- Line a 2lb loaf tin with parchment paper. Set aside.
- Preheat your oven to 180°C/160°C fan.
- For the cake, beat the butter and sugar together until soft.
- Gradually add the eggs and vanilla, mixing between each addition.
- Add in the sieved flour and mix.
- Dust the sultanas in 1 tablespoon of flour and add to the mix.
- Finally, add the grated apple, milk, and mix to combine.
- Spoon the mixture into the tin and bake for 50 minutes.
- Remove from the oven and allow to cool before slicing.
