Handmade on the Lonergan family farm in County Waterford, using raw milk from our pedigree herd of Friesian cows The Lonergan family have been farming in the lush rolling countryside of Knockanore for over 60 years. Eamonn and Patricia began making cheese on the farm in 1987, and have gone on to win a multitude of awards for their unique and subtle style of cheddar. The very much attribute the richness and depth of flavour in their cheese to the quality of grass upon which the cows graze and the traditional techniques used.
