Preparation & Usage
Instruction for use Use good quality fresh or frozen fruit or fruit juice in a large saucepan. Hygiene is essential for good keeping; make sure utensils are clean. Wash and sterilise jars and dry in a warm oven. Use 1kg fruit to one pack of Sure-Set at a time. Using larger quantities requires more boiling. Wash and prepare the fruit and cut into small pieces or mash (a liquidiser may be used). Some fruits may require cooking to soften, but do not boil off added water, so that you end up with 1kg of cooked fruit. If using frozen fruit it will be soft enough when thawed. Add 1kg Sure-Set to 1kg fresh crushed, mashed or cooked fruit. Heat slowly while stirring until the Sure-Set is dissolved, then bring to the boil and boil vigorously for 4 minutes. Skim the jam if necessary before filling into the dry, warm jars (use warm jars to avoid cracking). Fill jars right to the top, then cover the entire surface with a correctly sized waxed disc, trimming if necessary. Apply a cellophane cover when the jam is really hot or absolutely cold. General Directions for Jellies Add 1kg Sure-Set 3/4 litre of unsweetened real fruit juice. Bring to boil and boil vigorously for 1 minute.
