10 Signature Tastes piccolo cherry vine tomatoes - Chopped
50mls Signature Tastes Sicilian extra virgin olive oil

Directions

Ingredients

  • 18 Atlantic prawns
  • 2 cloves garlic, chopped
  • 1 red chili, chopped
  • 10 cherry tomatoes, quartered
  • 50ml olive oil
  • 1 lemon
  • Chopped coriander
  • 1 baguette, cut into slices at an angle (1 cm thick) to make crostini

Method

  1. Put a pan on a medium heat, add the olive oil, and then add the garlic and chili. Cook for 2 minutes.
  2. Add the tomatoes and fry for 2 minutes.
  3. Add the prawns and cook for 2 minutes until they turn pink.
  4. Finish with chopped coriander and a squeeze of lemon.
  5. Place the baquette slices on a tray.
  6. Drizzle with olive oil.
  7. Season to taste.
  8. Bake in a 170-degree oven until crisp and golden brown (6-8 minutes).
