Zesty Prawn and Noodle Stir-Fry with Sweet Chilli

Ingredients
2 packets Signature Tastes Wild Atlantic prawns
6 spring onions, chopped
2 cloves garlic, finely chopped
100g bean sprouts
1 packet fresh SuperValu coriander
1 packet dried egg noodles
1 tablespoon vegetable oil, plus extra for drizzling
3 tablespoons SuperValu Signature Tastes Sweet Chilli Sauce
1 tablespoon soy sauce
Juice of 1 lime
1 tablespoon cornflour

- 2 packets Signature Tastes Wild Atlantic prawns
- 6 spring onions, chopped
- 2 cloves garlic, finely chopped
- 100g bean sprouts
- 1 packet fresh SuperValu coriander
- 1 packet dried egg noodles
- 1 tablespoon vegetable oil, plus extra for drizzling
For the Sauce:
- 3 tablespoons SuperValu Signature Tastes Sweet Chilli Sauce
- 1 tablespoon soy sauce
- Juice of 1 lime
- 1 tablespoon cornflour
Method
- Bring a pot of water to a rolling boil. Add the packet of dried egg noodles and cook for 3 minutes, or until al dente. Drain immediately in a colander and rinse thoroughly under cold water to stop the cooking process. Drizzle with a little vegetable oil to prevent sticking and set aside.
- In a small bowl, whisk together the 3 tablespoons of SuperValu Signature Tastes Sweet Chilli Sauce, 1 tablespoon soy sauce, juice of 1 lime, and 1 tablespoon cornflour until smooth. Set aside.
- Heat 1 tablespoon of vegetable oil in a wok or large frying pan over high heat until simmering. Add the prepared prawns and stir-fry for just 1 minute until they turn pink and opaque. Remove the prawns from the wok and set aside.
- Add the chopped garlic and spring onions to the same wok. Stir-fry for 30 seconds until fragrant. Return the noodles to the wok and cook for 2 minutes on high heat, tossing constantly to heat them through.
- Pour the prepared sweet chilli sauce mixture over the noodles and vegetables. Return the cooked prawns to the wok. Continue to stir-fry for a final 2 minutes, ensuring everything is well coated and the sauce has thickened slightly.
- Remove the wok from the heat. Stir in the bean sprouts and the main portion of chopped coriander, tossing everything together until combined.
- Serve immediately, garnished with the remaining 2 tablespoons of fresh chopped coriander.
