Warm Balsamic Red Onion and Cheddar Flatbreads with Apple and Fig Chutney

2 red onion and cheddar flat breads
1 Cooleeney Brie, sliced
1 jar Signature Tastes apple and fig chutney
1 packet SuperValu rocket
3 plum tomato slices
Extra virgin olive oil to dress salad
Salt
Pepper

- 2 red onion and cheddar flatbreads
- 1 Cooleeney Brie, sliced
- 1 jar Signature Tastes apple and fig chutney
- 1 packet SuperValu rocket
- 3 plum tomato slices
- Extra virgin olive oil, to dress salad
- Salt and pepper
Method
- Preheat the oven to 160°C and lay the flatbreads on a tray.
- Smear both flatbreads with a heaped tablespoon of chutney.
- Lay on the sliced tomatoes and add the sliced Brie, then bake in the oven for 10 minutes at 160°C.
- To serve, dress the rocket with 1 tablespoon of extra virgin olive oil, salt, and pepper, then place on top of the warmed flatbreads.
