8 slices of SuperValu Signature Tastes Smoked Streaky Rasher
2 Granny Smith apples
50g butter
3 large SuperValu eggs
350g plain flour
1 heaped teaspoon baking powder
100mls buttermilk
Pinch salt
1 bottle SuperValu Signature Tastes Maple Syrup
Directions

Ingredients

  • For the topping:
  • 8 slices of SuperValu Signature Tastes Smoked Streaky Rasher
  • 2 Granny Smith apples
  • 1 bottle SuperValu Signature Tastes Maple Syrup
  • 50g butter
  • For the pancake batter:
  • 3 large SuperValu eggs
  • 350g plain flour
  • 1 heaped tsp baking powder
  • 100ml buttermilk
  • Pinch of salt

Method

  1. Crack the eggs into a bowl and add the buttermilk.
  2. Add the flour and baking powder, then whisk until the batter is smooth.
  3. Heat a non-stick heavy-based frying pan over medium heat. Add a little oil.
  4. Pour in 3 small ladles of batter and cook each pancake for 2 minutes per side until golden and firm.
  5. Grill the streaky rasher separately until crisp and golden.
  6. For the apples, peel, core and cut into wedges. Sauté in butter on medium heat until golden.
  7. Add a generous splash of maple syrup and remove from heat.
  8. To serve, stack the pancakes on a plate, top with sautéed apples and grilled rasher, then drizzle with maple syrup and dust with icing sugar.
