Our journey continues at Clonakilty where all our spirit is matured, blended, and bottled in-house under the watchful eye of our head distiller. Only then can we call it Clonakilty Irish Whiskey. Filtered by nature Using our three majestic copper pot stills, we create an exceptionally elegant new make spirit. This spirit is cut with deep well water which has been perfectly filtered by nature. Our spirit is then filled into carefully chosen casks where it patiently rests in our maturation warehouse as it slowly extracts its wonderful flavours.
