1 medium cauliflower
1 tbsp olive oil
2 tbsp of lovely basil pesto
1 tbsp tahini
Juice of ½ a lemon
2 cloves garlic, minced
1 tbsp fresh parsley
Black pepper

  • 1 tbsp olive oil
  • 2 tbsp of lovely basil pesto
  • 1 tbsp tahini
  • Juice of ½ a lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley
  • Black pepper

Method

  1. Preheat your air fryer to 190°C.
  2. Remove the outer leaves from the cauliflower and trim the stem end to create a flat base.
  3. Slice the cauliflower vertically into 2-inch steaks. You should get 2-3 steaks depending on the size of the cauliflower.
  4. Brush both sides of each cauliflower steak with olive oil and season with salt and pepper.
  5. Place the cauliflower steaks in the air fryer basket in a single layer and cook for 20-25 minutes, flipping halfway through, or until the cauliflower is tender and golden brown on both sides.
  6. While that’s cooking, in a small bowl, mix the tahini, lemon juice, garlic, and parsley until smooth. If the dressing is too thick, add water, one tablespoon at a time, until it reaches your desired consistency. The dressing should be pourable but not too runny.
  7. Once the cauliflower steaks are cooked, transfer them to a serving plate, smear on the pesto, then drizzle the tahini lemon dressing on top, and garnish with some freshly cracked black pepper.
