1 Avocado
Juice of ½ lemon
½ Spring onion, roughly chopped
½ Red chilli, roughly chopped
2 tbsp Sour cream
A handful of fresh coriander
200g Signature Tastes feta cheese
4 Eggs
1 tbsp Chilli flakes
4 Tortilla wraps
Siracha sauce

  • 1 Avocado
  • Juice of ½ lemon
  • ½ spring onion, roughly chopped
  • ½ Red chilli, roughly chopped
  • 2 tbsp Sour cream
  • A handful of fresh coriander
  • 200g Signature Tastes feta cheese
  • 4 Eggs
  • 1 tbsp Chilli flakes
  • 4 Tortilla wraps
  • Siracha sauce

Method

  1. Blend the avocado flesh, lemon juice, spring onion, chilli, sour cream and coriander until smooth, season with salt and pepper.
  2. Crumble ¼ of the feta onto a hot pan and once it gets crispy on the edges, crack an egg into the middle.
  3. Cover with a saucepan lid to steam the egg.
  4. Spread some whipped avocado onto a tortilla wrap, and place the egg on top.
  5. Garnish with spring onion, coriander and sriracha sauce.
