Salmon Parcels with New Potatoes, Seasonal Vegetables, and Lemon Garlic Butter

4 SuperValu salmon fillets (skinless, boneless)
4 handfuls green beans, topped
4 handfuls cherry tomatoes, halved
600g new potatoes
Olive oil
sea salt
black pepper
1 lemon (juiced and sliced)
30g butter
4 cloves garlic, minced
Handful of fresh parsley, chopped

For the salmon parcels:
- 4 SuperValu salmon fillets (skinless, boneless)
- 4 handfuls green beans, topped
- 4 handfuls cherry tomatoes, halved
For the potatoes:
- 600g new potatoes
- Olive oil, sea salt, and black pepper
- 1 lemon (juiced and sliced)
For the lemon garlic butter:
- 30g butter
- 4 cloves garlic, minced
- Handful of fresh parsley, chopped
Method
- Preheat and boil potatoes:
- Preheat oven to 200°C / Gas 6.
- Boil new potatoes in salted water for 10–15 minutes, or until tender.
- Drain and season with salt and pepper.
- Assemble salmon parcels:
- Place one salmon fillet on a large rectangle of foil or baking parchment.
- Arrange a handful each of green beans and cherry tomatoes around the salmon.
- Top each fillet with 1 tsp butter and a lemon slice.
- Make lemon garlic butter:
- In a small saucepan, melt the remaining butter.
- Add minced garlic and lemon juice; cook for 1 minute.
- Stir in 1 tbsp of chopped parsley.
- Bake parcels:
- Tightly seal each parcel to trap steam and place on a baking tray.
- Bake for 15–20 minutes, until the salmon is flaky and cooked through.
- Serve:
- Open the parcels and serve the salmon and vegetables alongside the new potatoes.
- Drizzle with garlic butter and garnish with fresh parsley.
