2 sheets ready-made puff pastry
1 egg, beaten
10 pearl mozzarella balls, halved
8 Sun-dried tomatoes, chopped
3 tbsp basil pesto
20 baby basil leaves

  • 1 egg, beaten
  • 10 pearl mozzarella balls, halved
  • 8 sun-dried tomatoes, chopped
  • 3 tbsp basil pesto
  • 20 baby basil leaves

Method

  1. Preheat the oven to 220°C (200°C fan) / Gas 6.
  2. Cut 20 star shapes from the puff pastry using a cutter.
  3. Arrange the stars on a lined baking tray, spacing them slightly apart.
  4. Brush each star with beaten egg and bake for 10 minutes, until golden and puffed.
  5. Remove from the oven, place half a mozzarella pearl on each star, and return to the oven for 1–2 minutes until just melted.
  6. Transfer the pastry stars to a serving platter.
  7. Top each with a little sun-dried tomato, a small dollop of pesto, and a baby basil leaf.
  8. Top Tip: These can be baked and cooled a few hours ahead. Simply reheat in a hot oven for 2–3 minutes before topping and serving.
