Triple-leaf lettuce mix
Rocket (arugula)
150g blueberries
2 ripe peaches, skinned and cut into wedges
2 avocados, sliced
½ red onion, finely sliced
200g feta cheese, cubed
100g pecan nuts, roughly chopped
1 tbsp sesame seeds (for garnish)
3 tbsp honey
1 tsp mustard
50ml extra virgin olive oil
Juice of ½ lemon
Pinch of chili flakes

  • Triple-leaf lettuce mix
  • Rocket (arugula)
  • 150g blueberries
  • 2 ripe peaches, skinned and cut into wedges
  • 2 avocados, sliced
  • ½ red onion, finely sliced
  • 200g feta cheese, cubed
  • 100g pecan nuts, roughly chopped
  • 1 tbsp sesame seeds (for garnish)

Dressing

  • 3 tbsp honey
  • 1 tsp mustard
  • 50ml extra virgin olive oil
  • Juice of ½ lemon
  • Pinch of chili flakes

Method

  1. Make the dressing: Add all dressing ingredients to a clean jam jar. Seal and shake well until fully combined.
  2. Assemble the salad: In a large serving bowl, add all the salad ingredients except the sesame seeds. Toss gently to mix.
  3. Finish and serve: Drizzle the dressing over the salad and garnish with sesame seeds.
