We've been distilling Jameson since 1780 but we're always open to new ideas. So, when a local craft brewer borrowed our casks to age their fine Irish stout, it gave us an idea; why not finish our own Jameson in the stout-seasoned oak barrels? The trademark smoothness of Jameson Original, with additional rich flavours of coffee and cocoa from the beer cask finish. Official records stretch back to 1608, when the area was granted its license to distil. Over 400 years later, whiskey is still being made in Bushmills, thanks to experience and craft passed down from generation to generation. We couldn't make our whiskey anywhere but here. Our water, drawn from the River Bush, flows over beds of basalt rock, the same rock that lends its unique character to another famous local attraction the Giant's Causeway. Bushmills is more than just a whiskey. It's a village, where family, friends and neighbours work side by side at the distillery. As we often say, "without the village, there would be no whiskey and without the whiskey, there would be no village".

Charring is an age-old method for invigorating barrels to intensify the taste. Time spent maturing in these double-charred barrels lends our whiskey a unique richness, with more intensified notes of vanilla sweetness and caramel, alongside toasted wood, fruit, and warm spice. A swapping of whiskey and beer barrels soon after resulted in Jameson Caskmates - Irish whiskey that has been patiently finished in craft beer-seasoned barrels. For Jameson IPA Edition, we have finished Jameson whiskey in craft IPA barrels. The result is a whiskey that features the signature smoothness of Jameson alongside light hints of hops, zesty citrus and fresh floral notes. Clonakilty Distillery Single Pot Still Irish Whiskey Bottle (70 cl), €39.95
This quintessential Irish whiskey is distilled with unmalted barley grown on our family farm and triple distilled in copper pot stills. Matured at our Atlantic Ocean warehouse in ex-Bourbon, Oloroso and Amontillado Sherry casks, capturing the essence of our coastal heritage. Nose: Vanilla sweetness leads to hints of demerara sugar, citrus peel and kiwi. Taste: Vanilla, caramelised pear and apple, gives way to a gentle wood spice, dark chocolate and orange. Sea salt and caramel lingers on the finish. The Atlantic's Edge At the southern tip of Ireland, where dramatic coastlines meet stormy seas, lie our barley fields. Centuries of sea mist and ocean spray have infused the soil, giving a complexity to every grain before being harvested and taken to our distillery by the waterfront in Clonakilty. High above sea level We began our journey at our Atlantic warehouse, 200 feet above sea level by the edge of the ocean. Our journey continues at Clonakilty where all our spirit is matured, blended, and bottled in-house under the watchful eye of our head distiller. Only then can we call it Clonakilty Irish Whiskey. Filtered by nature Using our three majestic copper pot stills, we create an exceptionally elegant new make spirit. This spirit is cut with deep well water which has been perfectly filtered by nature. Our spirit is then filled into carefully chosen casks where it patiently rests in our maturation warehouse as it slowly extracts its wonderful flavours.

West Cork Black Cask Irish Whiskey is a fine blend of grain (66%) and malt (34%) whiskey aged in first fill bourbon casks for a period of three years, and then polish matured for a further year in heavily charred bourbon casks. The end result is a beautifully balanced whiskey with a taste of vanilla and lingering sweetness.

West Cork Dha Chasca (Two Casks) is a limited release of single malt Irish whiskey matured in Bodega Sherry casks & finished in double charred first fill Bourbon casks West Cork Dhá Chasca (Two Casks) is a unique and challenging single malt Irish whiskey, Pot distilled single malt new make whiskey is placed in Bodega Sherry casks and allowed to patiently mature for the requisite period of time. The single malt whiskey is then cut to 40% abv with naturally soft water and placed in double charred first fill Bourbon casks. The double charring process allows West Cork Distillers to produce a unique whiskey with accentuated vanilla, sweet caramel and honey attributes. These unique attributes from resting in double charred casks delicately complement the initial maturation in Bodega Sherry casks such as dried berries, green fruit and rich tannins.
