So, when a local craft brewer borrowed our casks to age their fine Irish stout, it gave us an idea; why not finish our own Jameson in the stout-seasoned oak barrels? This quintessential Irish whiskey is distilled with unmalted barley grown on our family farm and triple distilled in copper pot stills. Matured at our Atlantic Ocean warehouse in ex-Bourbon, Oloroso and Amontillado Sherry casks, capturing the essence of our coastal heritage. Nose: Vanilla sweetness leads to hints of demerara sugar, citrus peel and kiwi. Taste: Vanilla, caramelised pear and apple, gives way to a gentle wood spice, dark chocolate and orange. Sea salt and caramel lingers on the finish. The Atlantic's Edge At the southern tip of Ireland, where dramatic coastlines meet stormy seas, lie our barley fields. Centuries of sea mist and ocean spray have infused the soil, giving a complexity to every grain before being harvested and taken to our distillery by the waterfront in Clonakilty. High above sea level We began our journey at our Atlantic warehouse, 200 feet above sea level by the edge of the ocean. Our journey continues at Clonakilty where all our spirit is matured, blended, and bottled in-house under the watchful eye of our head distiller. Only then can we call it Clonakilty Irish Whiskey. Filtered by nature Using our three majestic copper pot stills, we create an exceptionally elegant new make spirit. This spirit is cut with deep well water which has been perfectly filtered by nature. West Cork Black Cask Irish Whiskey is a fine blend of grain (66%) and malt (34%) whiskey aged in first fill bourbon casks for a period of three years, and then polish matured for a further year in heavily charred bourbon casks. West Cork Dha Chasca (Two Casks) is a limited release of single malt Irish whiskey matured in Bodega Sherry casks & finished in double charred first fill Bourbon casks West Cork Dhá Chasca (Two Casks) is a unique and challenging single malt Irish whiskey, Pot distilled single malt new make whiskey is placed in Bodega Sherry casks and allowed to patiently mature for the requisite period of time. The single malt whiskey is then cut to 40% abv with naturally soft water and placed in double charred first fill Bourbon casks. The double charring process allows West Cork Distillers to produce a unique whiskey with accentuated vanilla, sweet caramel and honey attributes. These unique attributes from resting in double charred casks delicately complement the initial maturation in Bodega Sherry casks such as dried berries, green fruit and rich tannins.
