Valentine's Vodka Linguine

Ingredients
220g SuperValu Signature Tastes Bronze Die Linguine
1 tsp olive oil
1 shallot, chopped
2 garlic cloves, chopped
100g SuperValu Signature Tastes Irish Maple Flavour Smoked Streaky Rashers, diced
80g SuperValu Signature Tastes Italian Pesto Rosso
2 tbsp vodka
150ml cream
1 pinch of chilli flakes
50g parmesan, grated
1 tbsp butter
20g basil leaves

Directions
- Cook the pasta according to the instructions on the pack.
- Prepare the sauce: In a sauté pan over medium / high heat, warm the oil and add the bacon pieces. Cook for 2-3 minutes.
- Add the shallots and garlic and cook for a further two minutes to soften the shallots.
- Stir in the tomato pesto and chilli flakes and cook for a minute, stirring well.
- Pour over the vodka and when it has evaporated, add in the cream.
- Simmer for a further minute or so until the sauce is combined and smooth. Keep warm until the pasta is cooked.
- Drain the pasta, keeping about 100ml-125ml of pasta cooking water, then stir the pasta water into the creamy vodka tomato sauce, a little at a time. Stir in the butter for a glossy finish.
- Add the linguine and grated parmesan and stir to coat the pasta in the sauce.
- Divide into two pasta bowls and sprinkle extra pepper, parmesan and some fresh basil if desired. Enjoy piping hot!
