Traditional Spiced Beef

Ingredients
2 tbsp Black Treacle
1 tsp Cloves ground
2 tsp Ground Allspice
1 tbsp Juniper Berries
1 kg SuperValu Beef topside or silverside, trimmed
35 g SuperValu Brown Sugar
1 tsp SuperValu Salt
1 tbsp SuperValu Whole Black Peppercorns
350 mls Water
Directions
- First, marinate the beef. Rub the beef all over with the brown sugar and leave it for two days in a glass bowl covered in cling film in the fridge.
- In a mortar and pestle, crush the peppercorns, allspice, juniper berries, cloves and salt together, then stir in the treacle. Rub the beef thoroughly with this spice mix. Cover and store in the fridge for another 6 to 7 days. Turn the beef in the mixture once a day.
- After the 7 days, preheat the oven to 140°C/275°F/ gas mark 1. Place the beef in an ovenproof casserole dish, add the boiling water and cover tightly. Cook in the oven for 5 hours. Leave to cool in the liquid for 2 to 3 hours. Serve thinly sliced.
