Ingredients
3 sweet potatoes
2 tablespoons olive oil
½ tbsp paprika
½ tsp onion powder
½ tsp garlic powder

8 tbsp mayonnaise
1 tbsp mustard (Dijon or yellow)
1 tbsp tomato ketchup
1tsp Tabasco sauce (adjust to your spice preference
Directions
  1. Preheat your oven to 220°C with the fan setting on (if available), or Gas Mark 7.
  2. Line a large baking sheet with parchment paper for easy cleanup.
  3. Wash and dry the sweet potatoes. Cut them into thin wedges, about ½ inch thick.
  4. In a medium bowl, toss the sweet potato wedges with olive oil, paprika, onion powder, garlic powder, and a generous pinch of salt and pepper.
  5. Spread the seasoned wedges on the prepared baking sheet in a single layer, making sure they don't overlap. Bake for 20 minutes. Then, remove the baking sheet from the oven and flip the wedges with a spatula. Return the wedges to the oven and bake for another 10 minutes or until golden brown and crispy.
  6. Air Fryer Option: If using an air fryer, preheat it to 200°C. Arrange the seasoned sweet potato wedges in a single layer in the air fryer basket, ensuring they don't touch. You may need to cook them in batches. Air fry for 10 minutes, then remove the basket, flip the wedges, and return them to the air fryer for an additional 4 minutes, or until golden brown and crispy. Season to taste.
  7. While the wedges cook, combine all the ingredients for the dip in a bowl and stir well.
  8. Enjoy your sweet potato wedges hot with the creamy, tangy dip.
