Ingredients
2 sticks Celery, chopped
2 tbsp Chilli Flakes, chopped
2 tins Chopped Tomatoes (400ml)
2 tbsp Dried Mixed Herbs
6 clove Garlic, chopped
1 Green Pepper, chopped
2 tbsp Olive Oil
3 Onion, finely chopped
2 tins Red Kidney Beans (800g)
750 g SuperValu Fresh Irish Beef Mince
4 tbsp Tomato Puree
250 ml Vegetable Stock
Directions
  1. Over high heat, in a large sauté pan, drizzle the oil and add the minced beef.
  2. Sear and brown for 4-5 minutes, stirring to break large lumps of beef. Season with salt and pepper.
  3. Remove from the heat and transfer to the slow cooker.
  4. Add the onion, garlic, celery, red pepper, chili, dried herbs, chopped tomatoes, tomato puree, stock, and kidney beans.
  5. Season with salt and pepper.
  6. Stir to combine and cook on high for 2-3 hours or low for 6-7 hours.
  7. Check the seasoning and serve with rice or your favorite side.
  8. Cool and store in a container.
  9. When cold, portion into containers, label, and store in the fridge for 2 days or in the freezer for later use.
