Ingredients
50g pine nuts
80g basil leaves
2 garlic cloves, finely grated
50g SuperValu Parmesan Cheese Shavings
150ml SuperValu Extra Virgin Olive Oil
Directions
- Preheat the oven to 180°C. Prepare a rimmed baking tray with parchment paper.
- Toast the pine nuts for 5-7 minutes until golden brown, tossing once halfway through. Let them cool.
- Pulse the cooled pine nuts, grated parmesan, and garlic in a food processor until finely ground.
- Add the basil leaves. Gradually blend in the olive oil until the pesto is mostly smooth.
- Season with salt to taste and enjoy.
