Ingredients
500g baby potatoes, cut into cubes
160g broccoli florets
2 garlic cloves, diced
½ onion, diced
25g butter, melted
3 tbsp extra virgin olive oil
2 sprigs rosemary
A few sprigs of thyme
Salt, to taste
Pepper, to taste

  • 500 g Baby Potatoes, cut into cubes
  • 160 g Broccoli Florets
  • 2 Garlic Cloves, diced
  • ½ Onion, diced
  • 25 g Butter, melted
  • 3 tbsp Extra Virgin Olive Oil
  • 2 sprigs Rosemary
  • A few sprigs of Thyme
  • Salt and Pepper, to taste

Method

  1. Preheat the oven to 200°C (180°C fan) or gas mark 6.
  2. Spread the potatoes and broccoli on a large baking tray.
  3. Season with salt and pepper, then add the rosemary and thyme.
  4. Drizzle with melted butter and olive oil. Toss everything together.
  5. Roast for 10 minutes.
  6. Add the diced onion and garlic, toss again to coat.
  7. Return the dish to the oven and roast for an additional 15 minutes, or until golden brown and cooked through.
