Ingredients
2 slices sourdough
1-2 tbsp olive oil
150 g vine ripened cherry tomatoes
1 heaped tbsp lovely basil pesto
Salt & black pepper
Directions
  1. Preheat your air fryer to 200°C, and lightly brush both sides of each slice of sourdough bread with olive oil.
  2. Place the sourdough slices in the air fryer basket in a single layer and toast for 4-5 minutes, flipping halfway through.
  3. Quarter the tomatoes and in a small bowl, combine them with some salt, pepper, a little olive oil, and basil pesto. Mix until the tomatoes are well coated.
  4. Once the sourdough slices are toasted, remove them from the air fryer and place them on a serving plate.
  5. Spoon the tomato and pesto mixture on top and garnish with some cracked black pepper.
