2 eggs separated
100ml buttermilk
70g SuperValu Signature 40% milk or 85% dark Chocolate cut into small pieces
A little vegetable oil to brush pan
Icing Sugar to decorate

    • 100g flour
    • 2 eggs separated
    • 100ml buttermilk
    • 20g SuperValu Signature 40% milk or 85% dark Chocolate cut into small pieces
    • A little vegetable oil to brush pan
    • Icing Sugar to decorate
  • Chocolate Sauce:
    • 50g SuperValu Signature 40% milk or 85% dark Chocolate cut into small pieces
    • 25ml milk

Method

  1. To make the chocolate sauce, add the chocolate and milk to a saucepan and place it over medium heat.
  2. Whisk until the chocolate has melted, then add a little more milk if required to create a smooth, pourable consistency.
  3. To make the pancakes, separate the eggs. In a bowl, whisk the egg whites until they are fluffy and resemble clouds; set aside.
  4. Add the flour and egg yolks to another bowl and mix until smooth.
  5. Pour in the buttermilk and mix until combined.
  6. Finally, carefully fold the egg whites into the mixture, but do not overmix or you will lose the air.
  7. Brush a non-stick frying pan with a little vegetable oil and place it over medium heat.
  8. Spoon 2 tbsp of the mixture onto the pan and cook for 1 minute, then sprinkle a little chopped chocolate on top.
  9. Cook for about 1 minute until the edges begin to crisp. Flip the pancake over and cook the other side.
  10. Serve with a dusting of icing sugar and a drizzle of chocolate sauce.
