Ingredients
2 medium Baby Gem Lettuce
4 medium Baguette
100 ml Beef Stock
2 tsp Dried Mixed Herbs
2 cloves Garlic, crushed
200 g Mozzarella Cheese Balls, grated
1 tbsp Olive Oil
100 g Parmesan Cheese, grated
1 pinch Salt and Pepper
500 g SuperValu Signature Tastes Irish Hereford Beef and Chorizo Meatballs
350 g SuperValu Signature Tastes Tomato and Basil Sauce
Directions
  1. Heat a sauté pan over medium heat and drizzle in a little olive oil.
  2. Cook the meatballs and colour on all sides for 3 to 4 minutes.
  3. Add the onion, garlic, beef stock, and mixed herbs, and continue to cook for a further minute or so.
  4. Add the tomato, garlic, and basil sauce, and simmer with a lid on for 10 minutes until the meatballs are fully cooked.
  5. In the meantime, preheat the oven to 200ËšC.
  6. Halve the bread baguette rolls lengthways and drizzle with some olive oil.
  7. Sprinkle the rolls with parmesan cheese.
  8. Place the rolls on a baking tray and transfer to the oven for 3 to 4 minutes to warm through and crisp up.
  9. Remove the rolls from the oven and put the top halves of the rolls aside.
  10. Once the meatballs are cooked, divide the meatballs and sauce on the baguettes.
  11. Sprinkle with mozzarella and leftover parmesan cheese.
  12. Place the tray back in the oven for 5 minutes to allow the cheese to melt and colour.
  13. Remove from the oven, add a few salad leaves and the top halves of the baguettes, and serve immediately.
