Oat & Peanut Butter Energy Balls
Prep Time25 Minutes
Servings12
0Ingredients
200g Porridge Oats
150g Smooth Peanut Butter
80g Honey
50g Dark Chocolate Chips
2 tbsp milled flaxseeds or chia seeds
1 tsp Vanilla Extract
1 to 2 tbsp Milk
Directions
Ingredients
- 200 g porridge oats
- 150 g smooth peanut butter (or almond butter)
- 80 g honey or maple syrup
- 50 g dark chocolate chips (or chopped dark chocolate)
- 2 tablespoons milled flaxseed or chia seeds (optional but worth adding for extra fibre and omega-3)
- 1 teaspoon vanilla extract
- A pinch of salt
- 1 to 2 tablespoons milk, if the mixture feels too dry
Method
- In a large bowl, mix the oats, peanut butter, honey, chocolate chips, flaxseed, vanilla and salt together until everything is well combined. The mixture should be sticky but hold its shape when squeezed. If it feels too dry, add a splash of milk a tablespoon at a time.
- Pop the bowl in the fridge for 15 minutes — this firms the mixture up and makes it much easier to roll.
- Scoop heaped tablespoons of the mixture and roll into balls between your palms.
- Store in an airtight container in the fridge for up to a week.
