Duck Fat Roast Potatoes

2kg of SuperValu rooster’s potatoes 
200g Signature Tastes duck Fat 
2 Sprigs fresh rosemary 
Salt and pepper

- 2kg of SuperValu rooster’s potatoes
 - 200g Signature Tastes duck Fat
 - 2 Sprigs fresh rosemary
 - Salt and pepper
 
Method
- Peel and cut the potatoes into evenly sized pieces.
 - Place the potatoes in a pot of boiling water, bring to the boil, and let them simmer for 8 minutes. Then strain them in a colander.
 - Place the potatoes on a cooling rack and allow them to cool completely.
 - Preheat a heavy roasting tray in the oven with the duck fat.
 - Carefully add the cooked potatoes to the hot tray and roast in a hot oven at 190°C for 40 minutes, or until they are super crispy.
 - At this point, add the fresh rosemary, salt, and pepper, and roast for 15 more minutes.
