Brown Butter Spiced Apple Cake

Ingredients
4 - Apple
1 tsp Baking Soda
55 g Brown Sugar
250 g Butter (80g for Bread, 170g for icing)
175 g Caster Sugar
165 g Cream Cheese
1 - Fresh Egg
1 tsp Ground Cinnamon
240 g Icing Sugar
250 g Plain Flour
1 pinch Salt
35 g chopped nuts
Directions
- Preheat the oven to 180 degrees.
- Grease the cake tin and line with greaseproof paper.
- Slowly melt the butter in a saucepan until golden brown and then allow to cool.
- Add the melted butter to the sugar, egg, and apple sauce in a large bowl and mix.
- In a separate large bowl, add the dry ingredients: flour, baking soda, cinnamon, and salt. Then combine and mix the wet and dry mixtures.
- Add the mixture to the cake tin and then bake for 30-35 minutes. Leave on a rack to cool.
For the brown butter icing:
- Slowly melt the butter in a saucepan until golden brown and then chill for 1 hour.
- Once chilled, beat the butter with a mixer until light. Slowly sieve the icing sugar into the bowl, continually mixing until light and fluffy.
- Spread the brown butter icing over the apple cake once it is cooled.
- Cut into slices and serve with a drizzle of caramel.
