Banana and Chocolate Chip Bake

Ingredients
1 tsp Baking Soda
3 Bananas (very ripe/blackened)
120 g Caster Sugar
120 g Chocolate Chips
2 large Eggs
0.5 tsp Salt
190 g Self-Raising Flour
120 g Unsalted Butter (at room temperature)
0.5 tsp Vanilla Extract
Directions
- Preheat Oven to 200°C, 180°C fan, Gas 6. Line a 2lb loaf tin.
- Beat the butter and sugar together until pale and fluffy with a mixer.
- Add one egg at a time, beating between each.
- Mash the bananas well with a fork and add them to the mixing bowl along with the vanilla extract and mix to combine.
- Mix the flour and baking powder together and sieve into the mixture.
- Add the salt and mix everything well.
- Fold the chocolate chips into the mixture.
- Spoon the mixture into the lined loaf tin.
- Bake for 50 minutes, covering with foil after 30 minutes to prevent the top from burning.
- Rest on a wire rack to cool slightly before slicing.
