Ingredients
3 tbsp Signature Tastes Sicilian extra virgin olive oil + 1 tbsp for the Potatoes
3 Signature Tastes banana shallots - chopped finely
2 cloves Signature Tastes rose garlic - chopped
1 can Tomatoes
1 tbs Tomato puree
2 tsp Sweet paprika
Pinch chilli powder
5 potatoes peeled and diced into cubes

For the Sauce
- 3 tbsp olive oil
- 3 shallots, chopped finely
- 2 cloves garlic, chopped
- 1 can tomatoes
- 1 tbs tomato puree
- 2 tsp sweet paprika
- Pinch of chili powder
- Salt and pepper to taste
For the Cubed Potatoes
- 5 potatoes, peeled and diced into cubes
- Olive oil
- Salt & Pepper to taste
Method
- Lay the potatoes on a baking tray lined with parchment paper, drizzle with olive oil, and roast in a preheated oven for 30 minutes at 200°C until crispy.
- For the sauce:
- Heat the olive oil in a pan, add the shallots, and sauté for 5 minutes on medium heat until soft.
- Add the garlic, chopped tomatoes, spices, a pinch of salt and pepper.
- Bring to a simmer and cook for 10 minutes until the sauce thickens.
- To plate:
- Spoon the sauce into the bottom of a bowl.
- Place the crispy potatoes on top and finish with a crack of black pepper.
