Nectarine Summer Mocktail
Best in Season Nectarines are perfect for summer afternoon to enjoy with all family members including kids. Juicy and extra large nectarines, a dash of lemon and lime and some mint to complete with soda water. Delicious and refreshing. For an adult version, add a shot of gin for each glasses before topping with the prosecco instead of soda water. A brilliant summer family mocktail made into a adult cocktail!

Nectarine Summer Mocktail

4 tbsp sugar syrup, or more to taste (See method for how to make)
2 limes, zest and juice
1 tbsp fresh mint
1 lemon, juice
400ml soda water, or sparkling water
3 SuperValu Nectarines
Ice cubes (to serve)
1 nectarine, sliced (to serve)
4 sprigs mint (to serve)
Directions
- In a jug or bowl, place the sugar syrup, lime juice and zest, and mint.
- Muddle and crush the mint to extract and combine flavors.
- Place the mixture into a cocktail shaker and top up with soda water and ice.
- Stir and taste to balance the flavor to your taste with extra lemon juice or more sugar syrup.
- Cover and store in the fridge if not using immediately.
- To serve, fill glasses with ice cubes, add some mint leaves, and a few slices of nectarine.
- Stir the lime and mint mixture with extra ice and soda water.
- Pour the drink into the prepared glasses and enjoy immediately.
Tip: To make sugar syrup, combine equal parts sugar and water in a saucepan. Heat gently, stirring until the sugar has completely dissolved. Allow to cool before using.
