170g dark chocolate
2 tbsp cocoa powder
3 eggs
220g light brown sugar
1 tsp vanilla essence
120g self-raising flour
150g icing sugar
100g melted white chocolate

  • 170g butter, cubed
  • 170g dark chocolate (70% cocoa)
  • 2 tbsp cocoa powder
  • 3 eggs
  • 220g light brown sugar
  • 1 tsp vanilla essence
  • 120g self-raising flour

To decorate:/strong>

  • 150g icing sugar
  • 2–3 tbsp water or
  • 100g melted white chocolate
  • Halloween eye decorations

Method

  • Preheat the oven to 200°C (180°C fan) / Gas 6. Line a 9x13-inch baking tray with parchment paper.
  • Melt the chocolate – In a heatproof bowl, melt the butter, dark chocolate, and cocoa powder together over a saucepan of gently simmering water (or in short bursts in the microwave). Stir until smooth, then set aside to cool slightly.
  • Whisk the eggs and sugar – In a separate bowl, whisk together the eggs, light brown sugar, and vanilla essence until pale and fluffy.
  • Combine the mixtures – Pour the melted chocolate mixture into the egg mixture and stir until fully combined.
  • Add the flour – Sift in the self-raising flour and fold gently until just mixed.
  • Bake – Pour the batter into the prepared tray and smooth the top. Bake for 19–20 minutes, until the edges are set but the centre is still slightly gooey.
  • Cool completely – Allow to cool in the tin, then chill in the fridge before cutting into squares. (This helps them hold their shape!)
  • Decorate – Mix the icing sugar with enough water to make a thick, toothpaste-like consistency, or melt the white chocolate. Drizzle over the brownies using a piping bag or spoon, then top with Halloween eye decorations.
  • Set and serve – Chill briefly in the fridge to set the icing before serving.
