Ingredients
4 tbsp Signature Tastes Toscano Extra Virgin Olive Oil
500g Signature Tastes Piccolo Cherry Vine Tomatoes
3 Garlic cloves thinly sliced
1 Small chili thinly sliced or ½ tsp chili flakes
1 Small red onion thinly sliced
200g Feta cheese
2tbsp Honey
Handful fresh basil
Baguette to serve cut into slices
Directions

Ingredients

  • 4 tbsp Signature Tastes extra virgin olive oil
  • 500g Signature Tastes Piccolo Cherry Vine Tomatoes
  • 3 Garlic cloves, thinly sliced
  • 1 Small chili, thinly sliced or ½ tsp chili flakes
  • 1 Small red onion, thinly sliced
  • 200g Feta cheese
  • 2 tbsp Honey
  • Handful fresh basil
  • Baguette to serve, cut into slices
  • Salt and pepper

Method

  1. Preheat oven to 180°C, 180°C fan, gas 6.
  2. Pour half the olive oil into a 20 x 25cm ovenproof dish.
  3. Add the tomatoes, garlic, chili, and red onion slices.
  4. Season with salt and pepper and toss to coat everything in oil.
  5. Place the feta in the center and drizzle with the remaining olive oil and honey.
  6. Bake for 35-40 minutes, until the tomatoes burst and the feta is soft.
  7. Garnish with fresh basil leaves.
  8. Serve with a warm baguette.
