Ingredients
2 Salmon darnes
2 Parsnips, peeled and cut into lengths
150g Potatoes, cut into wedges
1 Red onion, peeled and cut into wedges
3 tbsps olive oil & 4 tbsps olive oil for the dressing
2 Garlic cloves, finely minced & 1 Garlic clove, finely minced for the dressing
100g Yoghurt
Handful of fresh mint, finely chopped
Zest of ½ a lemon
Directions

Ingredients:

  • 2 salmon darnes
  • 2 parsnips, peeled and cut into lengths
  • 150g potatoes, cut into wedges
  • 1 red onion, peeled and cut into wedges
  • 3 tbsps olive oil
  • 2 garlic cloves, finely minced
  • Sea salt & freshly ground black pepper

For the dressing

  • 100g yoghurt
  • Handful of fresh mint, finely chopped
  • 4 tbsps olive oil
  • Zest of ½ a lemon
  • 1 garlic clove, finely minced

Method:

  1. Place parsnips, potatoes and red onions into a bowl and toss with oil, salt, pepper and garlic. Place into the air fryer for 20 minutes at 180°C.
  2. Rub oil over the salmon and season with salt and pepper then add to the airfryer, popping it in on top of the veg - which should now be getting slightly golden and caramelised.
  3. Cook for a further 8 - 10 minutes, until the salmon is cooked through and the veg is tender.
  4. Make the dressing by mixing together all the ingredients in a small bowl and seasoning with salt and pepper.
  5. Remove the fish and veg from the airfryer and divide between 2 plates. Drizzle over the dressing and serve garnished with some extra mint leaves.
  6. To make this a healthy, balanced meal, serve with some salad leaves on the side.
