Ingredients
4 leaves of York cabbage, thinly sliced
½ each red, yellow, and green pepper, thinly sliced
1 spring onion, thinly sliced
2 carrots, finely sliced
2 garlic cloves, thinly sliced
80g bean sprouts
2 tbsp sunflower oil (plus extra for brushing or spraying)
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp sesame oil
Filo pastry sheets, cut into 6-inch squares
1 tbsp flour mixed with 1 tsp water (for sealing)
Sweet chilli sauce, for dipping
Salt, to taste
Pepper, to taste

Ingredients

  • 4 leaves of York cabbage, thinly sliced
  • ½ each red, yellow, and green pepper, thinly sliced
  • 1 spring onion, thinly sliced
  • 2 carrots, finely sliced
  • 2 garlic cloves, thinly sliced
  • 80g bean sprouts
  • 2 tbsp sunflower oil (plus extra for brushing or spraying)
  • Salt and pepper to taste
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • Filo pastry sheets, cut into 6-inch squares
  • 1 tbsp flour mixed with 1 tsp water (for sealing)
  • Sweet chilli sauce, for dipping

Method

  1. Preheat the air fryer to 200°C.
  2. Heat sunflower oil in a pan and stir-fry all vegetables for 2–3 minutes.
  3. Add oyster sauce, soy sauce, and sesame oil. Cook for 1 more minute.
  4. Season with salt and pepper, then set aside to cool completely (use the fridge to speed up the process).
  5. Place 1 tbsp of filling in the top centre of each filo square. Roll over twice, fold in the sides, and roll up fully.
  6. Seal the edge with flour paste.
  7. Brush or spray rolls with sunflower oil.
  8. Air fry for 12 minutes, turning halfway and brushing with oil again.
  9. Serve hot with sweet chilli sauce.

Top Tip

To keep the pastry crisp and flaky, don’t overfill and make sure the filling is completely cool before rolling.
