Our Spelt Story In 1952 Tom O'Sullivan and his family started a much loved tradition creating fresh breads and barm bracks for the local area. In 2004 when a family member became intolerant to wheat the O'Sullivan family looked for alternative grains. Spelt flour intrigued us and this is how our Spelt range began. The benefits of consuming spelt are numerous including spelt being higher in protein than wheat, contains higher levels of soluble and insoluble fibre, more B vitamins, essential amino acids, less gluten and is digested more easily than wheat. Our range includes a White and Brown sliced spelt loaf as well as a Spelt and Honey Seeded loaf. O'Sullivans created the buzz around spelt and are continuously extending their healthy bread range.
