Ingredients
2 - Eggs
400 ml Milk
250 g Plain Flour
1 pinch SuperValu Salt
SuperValu Sunflower Oil for frying
Directions
  1. Make the pancake batter by sifting the flour into a bowl, adding salt, and making a well in the center.
  2. Break the eggs into the well and add a little of the milk.
  3. Gradually add the remaining milk into the egg and flour mixture using a large whisk until a smooth consistency has been achieved.
  4. Cover with cling film and stand in the fridge for 1 hour if possible.
  5. Heat a heavy-based frying pan, and when hot, brush with the minimum of oil.
  6. Pour a small amount of the batter onto the pan and swirl it around until it is evenly and thinly spread over the bottom.
  7. Cook over a moderate to high heat for about 1 minute or until the edges are curling and the underside is golden.
  8. Flip over and cook the second side for 30 seconds or so until golden.

Topping Ideas

  • The Classic: Topping with a sprinkle of sugar and a squeeze of Lemon Juice.
  • For something a little different, try some fruit salad drizzled with SuperValu Supreme Vanilla Yoghurt mixed with a little honey.
  • For something more indulgent, try our Banana and Butterscotch Sauce.
