Ingredients
300ml cream
100ml milk
Salt
white pepper
4 SuperValu free-range eggs
75g Cheddar cheese, grated
80g Brie, chopped
250g chopped ham
100g chopped roasted vegetables
100g chopped scallions
A pinch of nutmeg
2 sheets of puff pastry
Directions
  1. Preheat the oven to 180°C.
  2. In a mixing bowl, whisk together the cream, milk, and eggs. Season with salt, white pepper, and a pinch of nutmeg.
  3. In a separate bowl, combine the grated cheddar, brie, chopped ham, roasted vegetables and scallions.
  4. Line a quiche dish or tart tin with the puff pastry. Add the filling mixture, then pour the egg mixture on top.
  5. Bake in the preheated oven for 35 minutes, or until the quiche is set and golden.
  6. Serve warm with a rocket salad and cranberry sauce.
