5 potatoes, peeled & cubed (Patatas Bravas)
Olive oil (Patatas Bravas, Pil Pil Prawns, Mojo Rojo, Crostini)
Salt & pepper (Patatas Bravas, Bravas Sauce, Mojo Rojo, Crostini)
3 shallots, finely chopped (Bravas Sauce)
6 cloves garlic, chopped (Bravas Sauce, Pil Pil Prawns, Mojo Rojo)
1 can tomatoes (Bravas Sauce)
1 tbsp tomato purée (Bravas Sauce)
2 tsp sweet paprika (Bravas Sauce)
Pinch of chili powder (Bravas Sauce)
18 prawns, peeled (Pil Pil Prawns)
1 red chili, chopped (Pil Pil Prawns)
10 cherry tomatoes, quartered (Pil Pil Prawns)
50ml olive oil (Pil Pil Prawns)
1 lemon, juiced (Pil Pil Prawns)
Chopped coriander (Pil Pil Prawns)
2 red peppers, quartered (Mojo Rojo)
1 red onion, quartered (Mojo Rojo)
2 tbsp red wine vinegar (Mojo Rojo)
1 lime, juiced (Mojo Rojo)
1 crusty baguette, sliced (Crostini)
1 wedge Manchego cheese, sliced

Patatas Bravas
- 5 potatoes, peeled & cubed
- Olive oil
- Salt & pepper
Bravas Sauce
- 3 tbsp olive oil
- 3 shallots, finely chopped
- 2 cloves garlic, chopped
- 1 can tomatoes
- 1 tbsp tomato purée
- 2 tsp sweet paprika
- Pinch of chili powder
- Salt & pepper
Pil Pil Prawns
- 18 prawns, peeled
- 2 cloves garlic, chopped
- 1 red chili, chopped
- 10 cherry tomatoes, quartered
- 50ml olive oil
- 1 lemon, juiced
- Chopped coriander
Mojo Rojo Sauce
- 2 red peppers, quartered
- 1 red onion, quartered
- 2 cloves garlic
- 2 tbsp red wine vinegar
- 1 lime, juiced
- 60ml olive oil
- Salt & pepper
Manchego & Crostini
- 1 crusty baguette, sliced
- Olive oil
- Salt & pepper
- 1 wedge Manchego cheese, sliced
Method
1. Roast the Potatoes (Patatas Bravas)
- Preheat oven to 200°C.
- Spread potatoes on a tray, drizzle with olive oil, season, and roast for 30 minutes until crispy.
2. Make the Bravas Sauce
- Heat olive oil in a pan. Sauté shallots for 5 minutes.
- Add garlic, tomatoes, tomato purée, paprika, chili powder, salt & pepper.
- Simmer for 10 minutes until thickened.
3. Cook the Pil Pil Prawns
- Heat olive oil in a pan over medium heat.
- Add garlic & chili, cook for 2 minutes.
- Stir in cherry tomatoes, cook for another 2 minutes.
- Add prawns, cook for 2 minutes until pink.
- Finish with lemon juice & coriander.
4. Prepare Mojo Rojo Sauce
- Roast peppers, onion, and unpeeled garlic in a dry pan for 15 minutes.
- Blend with vinegar, lime juice, olive oil, salt & pepper.
5. Make the Crostini
- Preheat oven to 170°C.
- Arrange baguette slices on a tray, drizzle with olive oil, season.
- Bake for 6-8 minutes until golden & crisp.
To Serve
- Patatas Bravas: Spoon the Bravas sauce onto a bowl or plate first, then pile the crispy potatoes on top.
- Pil Pil Prawns: Serve in a separate dish.
- Manchego & Mojo Rojo: Arrange Manchego slices on the board with Mojo Rojo in a small bowl.
- Crostini: Place alongside for dipping into the sauces.
