Ingredients
1 small Bay Leaves
1 tsp Black Peppercorns
1 medium Carrot , halved
1 tsp Dijon Mustard
3 clove Garlic , whole
500ml Guinness
2 tbsp Honey
1 tsp Mixed Spice
1 medium Onion , chopped
2 tbsp Orange Marmalade

Directions
  1. Place the ham in a large saucepan. Pour half of the Guinness around the ham fillet. Add the carrot, onion, garlic, bay leaf and peppercorns, cover with water.
  2. Bring to a simmer, cover with a lid and cook for a minimum of 110 to 120 minutes. Turn off the heat and set it aside to cool for 20 minutes.
  3. In the meantime, prepare the glaze. In a small saucepan, pour the rest of the Guinness and add the honey, orange marmalade, mustard, and mixed spices. Stir well to combine and bring to a simmer. Cook for a few minutes until the mixture coats the back of a spoon. Turn off the heat and set aside.
  4. Preheat oven to 200ËšC. Once the ham is boiled and cooled, lift it out and place it on an oven tray. Remove the top layer of fat from the fillet, then brush the ham with the Guinness and orange mixture and roast in the oven for about 15 to 20 minutes until golden brown, basting over the mixture if needed.
  5. Serve warm with the turkey joint and some mashed potato and vegetables.
